Cheesy Meatballs

Meatballs? Check.  Cheese? Check.  This casserole is quick and easy.  5 Ingredients. 2 Pans. Serves 8

Shopping List:

  • 33oz Artichoke hearts (packed in water)
  • 2lbs meatballs (precooked, raw, chicken, pork, beef, your choice) we used raw beef/pork
  • 2tbs Olive Oil
  • 24oz Pasta Sauce of your choosing
  • 2 C mozzarella Cheese

Cooking Steps

  1. Preheat Skillet to med
  2. Preheat oven to 375F/190C
  3. Add oil until is shimmers
  4. Place meatballs in skillet, brown and turn until all meats are thoroughly browned
  5. Drain artichoke hearts and quarter (if not already precut)
  6. Bust out your favorite 9”x13” pan and lightly coat with cooking spray
  7. Place the meatballs and artichokes in a single layer in pan
  8. Cover with preferred pasta sauce and evenly distribute
  9. Layer mozzarella cheese over sauce
  10. Bake uncovered 40-45 minutes or until its bubbling and GBD

Notes:

Once drained place artichokes on paper towels to further remove water.

There will be some “water” on the bottom of the pan even when fully cooked.  Didn’t diminish flavor

Can substitute artichokes with another vegetable of your choice
